These Fudgy Butterscotch cookies are chewy and incredibly fudgy and full of butterscotch chips. They’ll be your new favorite cookie!

My toddler Lucy loves to “help” me bake.
Keep in mind that we use the term “help” very loosely around here. I often find my 11 year old son in the living room, gaping open-mouthed at some cartoon on television, when he’s supposed to be “helping” me clean up the dinner mess.
So just take that word “help” with a grain of salt, if you will.
Honestly, there is nothing cuter than a sweet little girl biting her tongue in concentration as she slooooowly (time literally stands still. It is a lesson in patience like no other) spoons every. single. ingredient. into the mixing bowl. But sometimes…mama needs to move. We’ve got things to do, people to see, and DVR’d episodes of The Real Housewives that are burning a hole in my Recorded TV List. And in those situations…I am all about sneaking in a time saver or two to move things right along.
That’s where PAM Cooking Spray comes in! Not only is it my absolute favorite for quickly coating cake pans for a nonstick finish, but it’s also a major time-saver when it comes to cookies! I give my cookie scoop a good spray with PAM Cooking Spray and the scoop easily releases neat balls of cookie dough with no sticky mess!
Trust me, there is nothing worse than having to stop and wash your cookie dough scoop midway because it’s so clogged up with sticky dough that it won’t scoop anymore. Ain’t nobody got time for that kind of monkey business when we’ve got baking toddlers to deal with.
And since PAM leaves 99% less residue than margarine or bargain-brand cooking sprays, you don’t have to worry about your scoop not washing clean!
I have always been a huge fan of butterscotch chips in cookies, but it never occurred to me to pair them with CHOCOLATE cookies until the other day. Good night, Christopher Columbus, was that ever a good idea! These cookies are puffy and chewy, with a soft, super fudgy center. The creamy, buttery butterscotch chips are the perfect compliment to the chocolate. These are possibly my new favorite cookie!
Ingredients
- 1 1/4 cup salted butter, softened to room temperature
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 1/2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 3/4 cup dark cocoa powder (Dutch process)
- 2 Tablespoons instant chocolate pudding mix
- 1 teaspoon baking soda
- 1 1/2 cups butterscotch chips
Instructions
- In the bowl of your mixer, cream together your butter and both sugars on medium speed for about 2 minutes, until fluffy. Beat in eggs one at a time until blended, then mix in vanilla. In a medium bowl, combine flour, cocoa powder, chocolate pudding mix, and baking soda. Slowly beat into the butter mixture, scraping the sides of the bowl, until a stiff dough forms. Mix in butterscotch chips. Cover bowl and refrigerate for at least one hour.
- Preheat oven to 350. Spray medium cookie scoop with PAM Nonstick Spray, then scoop cookies onto parchment paper-lined baking sheet. Bake for about 10 minutes, until middles are puffy and soft but edges are firm. Let cool on baking sheet for 5 minutes before removing to wire rack to cool completely.
